Whipped Cream

I top my Banana Pudding with this whipped cream found in The Neely's Cookbook! Since discovering this - I stopped buying (nor will I ever buy in the future) whipped cream from the store! This is absolutely delicious and so much better than store bought whipped cream. I will admit - the whipped cream is a little finicky. If you beat too long or too short, the whipped cream will not form the "peaks" and stiffen up as it should. Also, the Neely's recipe calls for 1/2 cup confectioners sugar which is not enough. I always end up using a little over a cup of confectioners sugar. ENJOY!

Recipe courtesy of Gina & Pat Neely

Ingredients

2 Cups Heavy Whipping Cream
½ Cup Confectioners Sugar
1 teaspoon Vanilla Extract

Directions

Beat the whipping cream until it becomes frothy. Gradually add the confectioners sugar and extract. Beat until the whipped cream forms soft peaks; do not overbeat.
