Old Fashioned Pancakes
Breakfast is one of our favorite meals. My hubby looks forward to homemade pancakes on the weekends! One night we were both wanting pancakes for dinner and I didn't have any mix so of course I googled a recipe and this is what I found! I've been making this for years and it's always a WINNER everytime. I don't even bother with store bought pancake mixes!
Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1/2 teaspoon vanilla extract (optional)

3 tablespoons butter, melted
1 egg
1 1/4 cups milk
cooking spray

Directions:
1. | Sift together flour, baking powder, salt, and sugar in a large bowl. | |||||||||
2. | Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes. Note: I add a 1/2 teaspoon for vanilla extract just to give it a little something extra! | |||||||||
3. | Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes. Note: Instead of spraying with cooking spray - I actually use olive oil. It makes the edges of the pancakes have a nice "crisp" to them! |
