Shrimp Ceviche

One of my all time favorite appetizers!!! My sister - in - law Julissa Craven shared her recipe with me. I've made it quite a few times and it's absolutely delicious. ENJOY!

INGREDIENTS


1 pound shrimp
Approximately 6 large lemons
1/2 habanero pepper (finely chopped)
1/2 yellow onion (finely chopped)
Pepper to taste
Tabasco sauce (about 5 Tablespoons)
Cilantro (optional)


Note: Cilantro is optional but I definitely recommend using fresh cilantro! I also used red onion instead of yellow onion --- but that was just my preference. 

If you want to kick this up a bit add some fresh avocado - delish!

DIRECTIONS

Place shrimp in glass or plastic container (do not use metal container), add remaining ingredients to bowl. Lemon juice should cover shrimp. Cover container and let sit on kitchen counter for approximately 2 hours. Cover & Refrigerate. Note: The longer this dish marinates the better it is!
