Caprese

This is one of those salads that I frequently order in restaurants, but I never learned how to make. Now - I know:-) I absolutely LOVE tomatoes. I have never been a big fan of cheese; however, the mozzarella cheese combined with the tomatoes is absolutely splendid! The basil leaves are fragrant and add a nice kick to the salad. This is an extremely easy recipe - you just simply toss all the ingredients together:-) ENJOY

2 lbs. assorted chopped tomatoes (I used red & yellow grape tomatoes)
1 lb. cubed mozzarella cheese
1 cup chopped celery
1 cup chopped basil
1/3 cup olive oil
2 tablespoons red wine vinegar
Salt
Pepper

Toss tomatoes, cubed mozzarella, chopped celery, basil, olive oil & redwine vinegar, salt and pepper to taste!
